The Zinno Agricultural Company was established in 2019 and is conceptualized and managed by Lawyer Luigi Zinno. Its young founder felt the need to reconnect with nature and the sense of freedom it offers to escape, as much as possible, the stressful commitments of his complex profession as a lawyer. Thus, he decided to immerse himself in what he considers his ‘green gold.’
Driven by this vision and a new existential need, he acquired, through family donation and purchase, several hectares of agricultural land. Some of these were uncultivated, so he decided to plant them with ‘Nocellara dell’Etna’ olive trees, while others were already equipped with centuries-old olive groves of the same variety.
The olive groves are located:
• In the Municipality of Santa Maria di Licodia, Poggio dell’Aquila district, in the province of Catania, at the foot of Mount Etna, approximately 650 meters above sea level. This area has a predominantly agricultural vocation, with volcanic soil that gives unique characteristics to olive production. This area is under the DOP (Protected Designation of Origin) Monte Etna.
• In the Municipality of Cesarò (ME), precisely in Contrada Bolo Santa Barbara, an area adjacent to the Municipality of Bronte, at around 750 meters above sea level, at the foot of the Nebrodi Mountains. The climate here is cool and ventilated, contributing to the exceptionally high quality of extra virgin olive oil production.
The production from these two olive groves ensures an excellent product qualified as ‘EVO SICILIANO – NOCELLARA DELL’ETNA,’ one of the most valuable qualities. The olive harvest for oil production is carried out between late October and early November, directly from the plant, through hand-combing the foliage, using suitable tools or machinery and collection nets.
The pressing takes place within ’12 hours’ of harvesting at the ‘Romano’ oil mill in Bronte, with ‘cold pressing,’ ensuring a temperature not exceeding 22°C to preserve the nutritional and organoleptic characteristics of their extra virgin olive oil.

The features that make their olive oil superior are as follows: green color with golden yellow reflections, a fruity smell, green grass aroma, aromatic taste with low acidity level (0.4%), suitable for both meat and fish-based dishes.
In 2022, all the ‘Nocellara dell’Etna‘ olive production from the Zinno Estate obtained the IGP Certification, and in 2023, it received numerous international awards.
